How does mail.domain get pointed to new host

Since both my former host and you guys use mail.domain.com for the incoming and outgoing mail servers, what causes the mail to go to one host or the other. I know I can force this by using the actual server but if I use the generic form of the server (mail.domain.com) what causes the mail to go to one server or the other?

Which server your mail goes to will depend on which Nameservers you have your domain pointed to and the DNS records set up there. mail.comain.com is a CNAME that is automatically created for your main domain when the system creates your account. That CNAME is also automatically created for any Addon domains you create in cPanel. The mail CNAME created here is automatically pointed to the domain name so it resolves to the same server as your domain.
