How do I view my Email settings, & open the Outlook backup?
the instructions say the info is on my welcome email, but it does not seem to be. I'm looking for the email incoming and outgoing server information.

Hello, Thank you for your question. You can view your email settings in cPanel, in the same place you created the email addresses. If you need help importing a backup into your Outlook, this link to the Official Microsoft guide includes a section on "How to import .pst file data into Outlook."
